The Perfect Hummus

I tend to find recipes on sites like TastespottingFoodGawkerPinterest, etc…. So when I first decided to make homemade hummus, I came across a million recipes…with tahini, without tahini (that’s paste of ground up sesame for those of you not familiar)….lemon, no lemon…blah blah blah

So….After trial and error, I have come up with my own recipe – for which, of course, I do not have exact measurements to. But let’s try this anyway…

1 – 24oz can of Garbanzo beans (chickpeas)

3 tablespoons of water retained from the can of Garbanzo beans

2 tablespoons of tahini (approximately)

zest from 1 lemon

juice and pulp from that same lemon

a few teaspoons of Extra Virgin olive oil (you can use as much or as little as you want, based on how much water you include from the Garbanzo beans and your preference to consistency)

2-3 Garlic cloves (again, use as many or as little as you want, based on the level of garlic flavor you prefer)

A few dashes of cayenne pepper (gives a bit of flavor but definitely doesn’t overpower or make it too spicy at all)

I used hot pepper flakes as a decorative topping to give the hummus a little bit of a bite, but you could do this with anything…roasted red peppers, pine nuts, fresh herbs….whatever floats your boat. And of course, this is all optional!

Anything with this few ingredients is amazing!

Especially if you combine them all together at the same time to make something this yummy!

Here, I added most of the beans and the rest of the ingredients. I reserved a handful of the beans to decorate the hummus and also add some more texture to it.

Puree everything in a food processor, or even a blender if it tickles your fancy..

Now..for the beautification part: Create a little moat-like divot in the hummus once it is on your serving dish, add the left over chickpeas, hot pepper flakes and some extra virgin olive oil. This will give your dish a great presentation…even if it’s not intended for anyone but you!

…better late than never

Happy 4th of July!!

Hope everyone enjoyed their mid-week holiday! I had a great day….but I do wish I took at least Thursday and Friday off…

Must remember to take those days off in 7 years.

So after a day at the beach with all of the in-laws (brothers, sisters, mother), Nick and I hosted a little BBQ at my parents’ house. We all combined forces and hit up the grocery and liquor stores… Everyone got the ingredients they needed, and we put on a sweet spread in less than 2 hours!

I made a typical Greek salad and helped chop some veggies for a TO DIE FOR Eggplant Salad that Nick was making…thanks mommy and papi for teaching him! Everyone scarfed it down before I could take some descent pictures.

{I’ll definitely share the recipe soon}

But what I’m really proud of is the American Flag Platter that I made!

Tell me what you think about this combo….Watermelon and Feta! Sooo good! Sweet and salty goodness in your mouth! LOVE!

Or for Labor Day 🙂
